This chickpea stew — made with squashes, eggplants, tomatoes, and coconut milk, then served over brown basmati rice — appeared in Shauna and Dan Ahern's James Beard award-winning cookbook, Gluten-Free Girl Every Day. They were inspired by a dish from The Hardware Store. And now they will be making it for your lunch in Relish. The dish is delicious, gluten-free, and plant-based as well.
