Hsiao-Ching Chou, author of Chinese Soul Food: A Friendly Guide to Homemade Dumplings, Stir-Fries, Soups, and More, is renowned for her dumpling classes.

The former food editor at the Seattle P-I, Hsiao-Ching has been sharing her approach with readers and students for two decades and was featured on Anthony Bourdain’s “No Reservations” to show Anthony the secrets of making homestyle pot stickers.

In this class, we’ll learn how to make dumpling dough and roll out the wrappers, two fillings (pork-and-Chinese cabbage and mixed vegetable); five folding and pleating techniques; and two cooking methods (boiled and pan-fried, aka pot stickers).
